INGREDIENTS

· 2 cups all purpose flour (4 ½ dl)
· 2/3 cup unsweetened cocoa powder (1 ½ dl)
· 3/4 cup granulated sugar (1 ¾ dl)
· 2 tsp baking powder
· 1/2 tsp salt
· 1 cup milk (2 ½ dl)
· 1/3 cup plain yogurt (¾ dl)
· 1/3 cup vegetable oil (¾ dl)
· 2 eggs
· 1 tsp vanilla extract
· 1 cup semisweet chocolate chips (2 ½ dl)

INSTRUCTIONS

1. Preheat oven to 350-F. (175°C)
2. Line a standard muffin tin with a dozen, 2-1/2 inch, cup-cake paper baking cups.
3. In a mixing bowl, add the flour, cocoa powder, sugar, baking powder and salt. Mix dry ingredients well with whisk.
4. In another mixing bowl add the milk, yogurt, vegetable oil, eggs and vanilla extract. Mix well with whisk until blended.
5. Add the liquid ingredients to the dry ingredients along with 1/2 of the chocolate chips.
6. Stir until dry ingredients are just moistened. Careful not to over mix.
7. Pour batter into 12 muffin cups. Fill each almost to the top.
8. Sprinkle the other half of the chocolate chips evenly into the filled muffin cups.
9. Bake at 350-F for 20 to 25-minutes or until a toothpick comes outclean when inserted into center of muffin. Allow to cool before serving.

CHOCOLATE FROSTING

60 g butter
5 dl icing sugar (2 cups)
½ dl unsweetened cocoa powder (1/4 cup)
100 g cream cheese

In a mixing bowl, add the butter, icing sugar and cocoa powder. Mix well with whisk until blended. Add the cream cheese and mix well with whisk until blended.
